Something pretty to brighten up the weekend — Rainbow Jelly!
I made these for Naomi’s birthday party last month and they were a hit with the kids and the adults alike. Jelly is a yummy sweet treat and the multi-coloured layers just made them all the more fun to eat. They generated quite a bit of interest and I had a couple of queries about these so I thought I’d make a post of it.
I hesitate to call this a recipe since I really just used boxed jelly mix with the minor tweak of adding some gelatine powder. I added the gelatine powder as I have the bad experience of jelly melting into liquid out at room temperature and wanted the jelly to be more stable.The rest was just a matter of assembly! It’s really very simple, but do remember to give yourself plenty of time to get these done as the jelly layers do need some time to set.
Rainbow Jelly
(Makes about 20 cups)
Ingredients:
1 box of lime flavoured jelly mix (Tortally)
1 box of lemon flavoured jelly mix
1-2 boxes of orange flavoured jelly mix
1-2 boxes of strawberry flavoured jelly mix
250ml hot water per box of jelly
250ml ice water per box of jelly
¼ teaspoon of gelatine powder per box of jelly
Method:
1. Mix up the lime flavoured jelly first by placing one box of jelly crystals in a jug and adding hot water to dissolve the crystals.
2. After the jelly crystals have mostly dissolved, stir in the gelatine powder until dissolved. (Don’t worry if after stirring for quite a while, some crystals are still visible. They will disappear after you add the ice water.)
3. Add ice water to the hot jelly mixture and continue to stir to mix.
4. When well mixed, pour out into individual cups to approximately 1-1.5cm in depth. Use your judgement to estimate this to approximately ¼ of the depth of the cup.
5. Put in the refrigerator to set. This will take at least 3-4 hours.
6. When the jelly has set, mix up the next layer (lemon flavoured jelly) using the same directions set out in steps 1 to 5 above.
7. Repeat for the remaining two layers with orange flavoured jelly then strawberry flavoured jelly.
8. When completed, serve and enjoy!
Cooking Notes:
♥ If you use sloped cups like I did, you will probably need more than one box of jelly for the top two layers. It’s probably a good idea to buy an extra box and keep it in reserve if you need it.
♥ Remember to give your jelly layers ample time to set in the fridge. I did mine over a few nights, leaving each layer to set overnight before continuing with the next layer the next day.
